Apple Pumpkin Oatmeal

Coat an 8” square pan with spray or butter

2.5 c old fashioned regular rolled oatmeal

1 15oz can pumpkin puree (this is plain pumpkin, not pie filling)

1 large apple shredded on a box greater (coarse) or about 3/4 c of unsweetened applesauce

1 c whole milk or substitute as oat, soy, or almond

2 large eggs beaten

1/2 cup maple syrup, or molasses or pancake syrup

2 tsp pumpkin spice (or mix equal portions of nutmeg, cinnamon, and cloves to make 2 tsp)

2 tsp vanilla extract

1 tsp baking powder

1/2 tsp kosher salt

1/2 cup chopped walnuts

Plain or vanilla whole-milk Greek yogurt for topping

Preheat oven to 375 deg. 

Stir together all ingredients, except walnuts, in a bowl to mix well

Pour mix in prepared baking dish and spread out evenly. 

Sprinkle with walnuts and mash them into mix

Bake until puffed, set and browned slightly for about 35 minutes

Let cool 10 minutes

Serve slices with yogurt and drizzle with more syrup or honey

Warm additional  servings in microwave when enjoying again.
