You can prepare this dish quickly. It easily reheats and leftovers can be frozen.
2 tbsp minced sweet onion
1 tbsp margarine
1 can of mushroom soup
½ cup water
½ cup sharp cheddar cheese
1 tbsp sherry
2 tbsp minced pimentos
1 tbsp chopped flat parsley
3 cups cooked spaghetti (vermicelli, fettuccini, or linguine)
1 cup diced cooked chicken, turkey, or ham
Salt and pepper to taste
Sauté onion in margarine until soft, then blend in soup, water, cheese and sherry. Simmer over low heat until cheese melts. Stir often. Add remaining ingredients and mix. Then bake for about 30 minutes at 350F until hot. Serve with a green salad, crusty baguette, and some sliced fruit to accompany.
