Ginger Bread

Ingredients:

6 tbsp butter

1/3 c Light brown sugar, firmly packed

1/2 c molasses

2 large eggs

1.75 c sifted flour

1 tsp baking soda

1/4 tsp salt

1 tsp ground  cinnamon

1/4 tsp ground allspice

1/4 tsp nutmeg

1.5 tsp ground ginger

1/8 tsp ground cloves

1/2 c  buttermilk

Granulated sugar

Preparation:

Grease and flour 9” square baking pan. Preheat oven to 350 degrees

Cream butter and brown sugar until fluffy, beat in molasses, beat in eggs, one at a time. Sift together dry ingredients. Add sifted ingredients a little at a time alternately with buttermilk, beating after each addition to sugar/butter mix. Spread gingerbread mix in prepared baking pan and sprinkle top with some granulated sugar. Bake in preheated oven for 25-30 minutes or until the bread springs back with lightly touched with a finger. 

Serve warm or cooled with whipped cream or a scoop of vanilla ice cream.
