Potato Pancakes

Wondering what to do with leftover mashed potatoes?  Why not serve them up as pancakes?

 

Start with two cups of mashed potatoes and add ¼ cup of all-purpose flour, one beaten egg and some salt and pepper if not previously added. Stir all together to mix well.

 

Shape into golf ball size and then place in a pan with hot oil. Use a spatula to flatten them and fry until golden brown on one side and then flip over.

 

Enjoy with a dollop of sour cream or Greek Yogurt. You might even add a sprinkle of dehydrated onions. If you do, let the onions moisten a few minutes in the mix before frying.
